Tuscan Tortellini is such a great go-to dinner because not only is it quick and easy to put together, it tastes amazing and there’s so many different ways you can change it. Today, I’m going to show you how I make my Tuscan sauce made with all fresh ingredients for a super healthy and flavorful meal. The sauce is almost pure vegetables so you don’t even need to serve this dish with anything else. It has your meat, veggies everything all combined into one!
As you can see from the picture above, it consists of all sorts of fresh vegetables. One of the key of making this recipe is having the best green peppers, onions, garlic and other vegetables. This is how you know you’re cooking health, fresh, and on the right track!
Simply chop your onion and bell pepper, mince your garlic and grate your carrots. Add them to a large pot and saute them in oil until translucent.
It’s already smelling so good at this stage. I love using fresh veggies in cooking. It makes a meal that you can really feel good about eating and serving your family.
I like to use fresh tomatoes over canned for several reasons. First of all, I think they taste much better and you know they are fresh and haven’t been on a shelf for who knows how long. Secondly, canned tomatoes are always one of the top things on the dirty dozen list of foods to avoid. The acidity of tomatoes draws out the BPA in the lining of the cans they are in allowing it to leach out into the food you are consuming. And it’s so easy to make your own diced tomatoes that there is really no reason to not go fresh. Just toss your tomatoes into the bowl of a food processor and pulse for about 30 seconds or so. If you really want to go fresh with your Tuscan Tortellini, a food processor is a great investment!
The sauce comes together so naturally. The tomatoes start creating a sauce all themselves as they simmer in with all the other veggies.
Top with freshly grated Parmesan cheese and enjoy!
