Ingredients
  • 2 Chicken Breasts
  • 2 Thin slices Prosciutto di Parma
  • 2/3 Cup Grated Gruyere Swiss Cheese can be substituted.
  • 1/4 Cup All Purpose Flour
  • 3/4 Cup Panko Bread Crumbs
  • 2 Tbsp. Butter (melted)
  • 2 Eggs
  • Salt and Pepper

Instructions
  1. Preheat oven to 350 °F. Lightly oil a small baking pan.
  2. Butterfly the chicken and use a meat tenderizer to pound the chicken breasts to 1/4 inch thickness.
  3. Lay a slice of prosciutto over the chicken breast then top with 1/3 cup of the cheese.
  4. Roll the chicken breast tightly in a sheet of plastic wrap. Repeat with remaining chicken breast.
  5. Place flour into a dish and season with salt and pepper. Beat the eggs together in a second dish. Then in a third dish, mix together the bread crumbs and melted butter.
  6. Remove the plastic wrap from the chicken and lightly dust through with the flour. Dip into the eggs and then dredge through the bread crumbs.
  7. Place the chicken breasts into a greased baking dish and bake for 35-40 minutes. (Until internal temperature has reached 165 °F.)
