Tart and Sweet Cranberry Muffins

If the holidays weren’t already a busy enough time of year, add on preparing for a new baby! Erik and I have been hard at work getting the nursery put together… building the crib, hanging curtains, the list goes on and on! Yesterday we spent all evening building the hutch to go on the dresser. And today’s agenda includes getting the rocking chair into the nursery and setting up the bookcase!

With all this baby preparation going on, there has been little time to prepare for Christmas. So to get ready, I started putting together some menu ideas of what I want to make for Christmas brunch and dinner. Today’s recipe that I want to share with you is for sweet and flavorful cranberry muffins! These muffins are delicious and festive, the perfect addition to any Christmas brunch!

Sweetening the tart cranberries

The addition of brown sugar and cinnamon really round out the flavor. It gives the cranberry muffins a very classic and old fashioned taste. I love that you only need one bowl to make this recipe too. It makes for a really quick and easy prep time, and even better clean up time!

The nice, tart cranberries are so delicious! They taste just like the holiday season. And as cranberries have such a late harvest, they are always very plentiful in the stores for the holidays. The answer: Anytime! I’m sure you’ll be going back for more throughout the day. They make a nice afternoon or late night snack. And also travel well to tuck into a lunch box or take to a bake sale. Don’t forget a tall, cold glass of milk to go with them. So good!

Ingredients
  • 1 1/2 Cups All Purpose Flour
  • 1/2 Cup granulated sugar
  • 1/4 Cup Light Brown Sugar
  • 2 Tsp. baking powder
  • 1/2 Tsp. Cinnamon
  • 1/2 Tsp. salt
  • 1 Cup milk
  • 1/4 Cup oil
  • 1 Tsp. vanilla
  • 3/4 Cup Fresh Cranberries

Instructions
  1. Preheat oven to 400 °F.
  2. In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, cinnamon and salt. Stir to combine.
  3. Stir in the milk, oil and vanilla and continue to stir until all the ingredients are combined and the batter is smooth.
  4. Fold in the cranberries, careful not to over stir and smash them.
  5. Place liners into a muffin pan and then fill about 3/4 of the way with batter.
  6. Bake in the preheated oven for 20-25 minutes until golden brown.
