This dish is the perfect comfort food for anytime of the year. The creamy tomato mixed with the delicious Parmesan cheese is a match made in Heaven. The addition of spinach, carrots and onion give it added nutrition for an extra healthy meal that packs in essential nutrients while still being something the whole family will enjoy.
It’s also a very quick and easy meal to make and takes relatively few ingredients. Start by chopping a medium sized onion and mincing 4 cloves of garlic. I like to throw the garlic into the food processor for a quick and easy prep time. The food processor is also great for grating carrots. Then saute your prepped veggies together in oil for about 5-7 minutes.
Place the tomatoes in the food processor next and pulse until they are finely diced. Then, add them into the sauteed veggies.
Add in the parsley, red pepper flakes, salt and pepper. Stir all the seasoning until combined.
Next, whisk in the cream and let simmer for another five or so minutes. It starts smelling so good at this point you’re just going to want to eat the sauce!
Add in the fresh baby spinach and stir to incorporate in the sauce. I just love the color of the sauce contrasted against the delicious spinach. Let it simmer for a few minutes until the spinach is wilted and tender. Add the sauce to the prepared penne pasta. Serve with freshly grated Parmesan cheese and enjoy!
