Just cut up your potatoes into whatever shape fries you want. I like to cut the potato in half lengthwise and then cut the halves into strips. Next you want to soak your cut-up potatoes in a bowl of water for about thirty minutes. This is done to allow some of the extra starch to be released from the potatoes. See how the water looks a little murky? The starch is coming out into the water. When you get rid of some of that extra starch, it helps the french fries from sticking together during cooking. This will ensure that they’re even crispier and more delicious! Once they are finished soaking, pat them dry rid excess water before putting them in the oil.

Having a good deep fryer is essential for achieving perfect, crispy, french fries. Here is a deep fryer I recommend if you don’t have one. To make the best french fries, a deep fat fryer is simply a must!
Another good way to make these is using a cast-iron skillet. If you use a cast-iron skillet, fill it up with oil and cook them for 10 minutes on medium high. Always be careful with the oil, and NEVER put wet fries in oil.
The next step in making the perfect french fries is frying them twice. First, heat the oil to 275 degrees and let your fries cook for about five minutes. This gives them the chance to soften up without getting brown and crispy on the outside and still hard on the inside, and nobody wants that!
Once the fries have cooked for about five minutes bring them out of the oil and let them sit for a few minutes while you bring up the temperature of the oil up to 375 degrees. Once the oil is ready, place the fries back into the oil for five more minutes or until golden and crispy on the outside. Finally, bring them out of the oil and sprinkle them with sea salt.
