Nice, fluffy pancakes are the perfect weekend treat! Picture Saturday morning after getting to sleep in. You wake up extra hungry and today you have time for more than just a quick bagel or slice of toast. Today you have time for pancakes!
However you like your pancakes, this is the perfect place to start. These are the easiest pancakes in the world to make and require very few ingredients. It doesn’t require eggs, so no quick run to the store first because you’re all out of eggs.

The best part about these pancakes is how versatile they are. They are so light and fluffy that they taste completely amazing as is. Or if you prefer your pancakes with blueberries, chocolate chips or anything else these pancakes are thick enough to hold together with toppings. One of my favorite ways to have these pancakes is with blueberries and then topping with my homemade blueberry syrup.
Making your fluffy pancakes
Making these fluffy pancakes couldn’t be simpler. All you have to do is add the flour, baking powder, sugar and salt to a bowl. Give it a quick stir to combine the ingredients. Then add in the milk and oil. Keep stirring the batter until it is nice and smooth.
For really golden and even pancakes I suggest using a griddle. If you are going to use a griddle, it is best to heat it up to 425°F. It might take a bit longer to cook, but trust me, it’s totally worth it!
But if you don’t have one, a skillet will work too with heat at medium. Spoon about 2-3 tbsp. of the batter onto a preheated griddle. Let cook for about 2-3 minutes. You will notice bubbles start to form on the top of the pancakes signaling it’s time to flip. Use a nice, thin spatula for flipping. Then, let the pancakes cook on the other side for 2-3 more minutes. Serve warm with your choice of butter, syrup, whipped cream or fresh fruit.
