Green Bean Casserole From Scratch

Thanksgiving is right around the corner now! So, I thought this would be the perfect opportunity to share my recipe for green bean casserole from scratch!  Whether you eat this dish year round or not (and we do!) it’s just not Thanksgiving without it. This recipe is made entirely from the ground up, fresh green beans, fresh mushrooms, even fresh onions on top! And with the other key ingredients being cream and butter, you know you’re in for a treat!

Fry Up Those Onions

Making homemade fried onions is easier than you might think. And the result is incredible. So much better than the store bought kind. To make them, slice the onions really thin and put them in a bowl with about a cup and a half of milk. Then, let them sit for 5 minutes. After that simply dredge them through flour and fry them in oil at a high to medium heat. It’s so quick and easy and will really set your casserole apart from the rest.

Another nice thing about making homemade fried onions is that they can be made in advance. Just store them in an air tight container and they’ll be ready to go when you need them. And if you’re making this for a big Thanksgiving dinner, then you know how important it is to do as much as possible in advance!

And we can’t forget about the yummy green beans! I use about 2 lbs. for this casserole. It might seem like a lot but once they’re all cooked down, you really do need this much to fill the casserole dish. And with how delicious this dish is, you’ll want to have plenty.

Dice up those mushrooms!

When it comes to the mushrooms, I like to chop them very finely. I use my food processor to get them really small. Just toss the mushrooms in and pulse until you get a consistency as shown above. If you like, you can leave them in bigger pieces but personally, I think they taste better like this. It really distributes the mushroom taste throughout the casserole.

Once the mushrooms have been finely chopped, sautè them in a pan with butter to cook out all the juices. After the liquid sizzles out, add the two tablespoons of flour and stir.

  • French Fried Onions
  • 2 Onions (thinly sliced)
  • 1 1/2 Cups milk
  • 1 1/2 Cups flour
  • Oil for frying
  • 1 Tsp. salt
  • Green Bean Casserole
  • 2 Lbs. Green Beans (washed, trimmed, halved)
  • 3 Tbsp. butter
  • 8 Oz. Mushrooms
  • 3 Cloves Garlic (minced)
  • 2 Tbsp. All Purpose Flour
  • 1 Cup Vegetable Broth
  • 1 Cup heavy cream

Instructions
    French Fried Onions
    1. Place the thinly sliced onions into a bowl and pour the milk over them. Let sit for 5 minutes.
    2. Dredge the onions through flour and fry in oil until golden and crispy.
    3. Transfer to a plate lined with paper towels to drain and cool. Season with salt.
    Green Bean Casserole
    1. Preheat Oven to 350 °F.
    2. Bring 6 quarts of water to a boil with 1 tbsp. salt. Add the green beans and let boil for 5 minutes. Remove from heat, drain and place into an ice bath of water. Drain and set aside.
    3. In a large skillet, melt the butter. Add the chopped mushrooms and saute for about 5 minutes. Add the minced garlic and continue to saute for an additional 3-5 minutes.
    4. Add the 2 tbsp. of flour and stir well to combine.
    5. Stir in the vegetable broth and cream. Let simmer for 5-7 minutes until thickened.
    6. Add the green beans and season with salt and pepper. Transfer to a casserole dish and bake for 20 minutes.
    7. Remove from oven and top with fried onions. Bake for an additional 10 minutes. Remove from oven and let cool.
