A Quick and Easy Entree Complement

One of the hardest decisions to make at dinner time is picking a side dish that goes well with the main course. That is why this tomato, onion, and cucumber salad has become such a staple in our home. Cucumber Salad goes well with so many main courses I’m sure you will quickly add it into the rotation.

It goes great with just about any pasta dish, especially beef stroganoff and clam chowder. It also goes well with meat dishes such as steak or roasted chicken. And my most favorite dish to have it with is clam chowder! The creamy thickness of the chowder is the most perfect balance to this tangy, crunchy salad. It is truly a combination you should try as they are the perfect pair.

This cucumber salad is also a really quick and easy side dish to make…not to mention it’s also really healthy! Simply cut three roma tomatoes in half lengthwise and then slice them horizontally into small pieces. Peel and slice the cucumber in half lengthwise and then chop into small pieces. Chop the onion into small slices on a cutting board and then toss the veggies together in a salad bowl. Next, add the red wine vinegar and oil (Either vegetable oil or olive oil works fine.) and toss to coat the vegetables. Season with salt and pepper to taste and give it one more good stir to make sure all the veggies are seasoned and tasty.

This can be made ahead and set in the fridge for a fast and easy dinner prep. Or you can make it right before dinner and let it sit in the refrigerator or at room temperature for about 10 minutes so that the veggies can absorb some of the red wine vinegar and oil. Serve with your favorite pasta, meat or chowder for a healthy and delicious dinner.

Instructions
  1. Cut the roma tomatoes into wedges. Slice the cucumbers into slices and the red onion into thin slivers.
  2. Place veggies in a serving bowl and toss with the red wine vinegar, oil, salt and pepper.
  3. Let sit for at least 10 minutes to let the flavors have time to absorb. Enjoy!
