Japanese Vegetable Yakisoba

Yakisoba is one of my all-time favorite Japanese dishes. It’s loaded with veggies which make it really nutritious and flavored with an authentic blend of seasoning making it incredibly delicious! This classic noodle dish which started in 20th century Japan is now enjoyed all over the world. And now it can be enjoyed in your home as well!

This meal is fairly simple to create, especially if you have a food processor. I run all my veggies through and have them ready to sauté within minutes. Simply put the onions and bell pepper through the slicer blade. Then flip the blade over to shred the carrots. Then add the garlic cloves and jalapeno and mince them up. Place all these ingredients in a pan with some oil and saute. Hold onto the broccoli and green onions for now.

Then, sauté the veggies for 5-7 minutes. Meanwhile you can make the soba noodles and set them aside. Mix up all the sauce ingredients in a bowl and add to the sauteed veggies. Then add the broccoli and continue to cook until it’s tender.

Add the sauteed veggies and sauce in with the soba noodles and stir to combine. Serve in noodle bowls topped with fresh cut green onions and sesame seeds. This is also an excellent time to practice your chop stick skills! Learning to eat with chopsticks is one of the funnest parts of enjoying Japanese cuisine.

And for a really fun, all-out Japanese evening, try having your yakisoba with some hot sake served with a traditional sake set. Sake is a delicious rice wine authentic to Japan. Then fire up a fun anime like Spirited Away or Princess Mononoke! Whether you are a fan of anime or not, I promise you will enjoy these movies! For best effect, watch them in Japanese with english subtitles.

  • 6 Oz. Soba Noodles
  • 1/3 Cup Soy Sauce
  • 2 Tbsp. Worcestershire Sauce
  • 1 Tbsp. Sugar
  • 1 Tsp. salt
  • 1 1/2 Tsp. Sesame Oil
  • 1 Tsp. Rice Vinegar
  • 2 Tbsp. Vegetable Oil
  • 1 Onion (sliced)
  • 1 Red Bell Pepper (sliced)
  • 2 Carrots (grated)
  • 2 Stalks Broccoli (chopped)
  • 1 Jalapeno (minced)
  • 3 Cloves Garlic (minced)
  • 1 Tbsp. toasted sesame seeds
  • 1/3 Cup Scallions (chopped)

Instructions
  1. Boil the soba noodles for 4-5 minutes. Drain, rinse and set aside.
  2. Prepare the sauce by mixing the soy sauce, Worcestershire sauce, sugar, salt, sesame oil, and rice vinegar in a small bowl. Stir thoroughly until all the ingredients are mixed.
  3. Prepare the vegetables by slicing the onion and red bell pepper, grate the carrots, chop the broccoli and mince the garlic and jalapeno.
  4. In a large skillet add the 2 tbsp. of oil and sauté the onion, bell pepper, carrots garlic and jalapeno for 5-7 minutes.
  5. Add the sauce to the vegetables and let simmer another 3-4 minutes.
  6. Add the broccoli in with the other vegetables and stir to incorporate in the sauce. Sauté for 5-7 minutes until the broccoli is just tender.
  7. In a large bowl, mix the soba noodles and the vegetables together.
  8. Serve in noodle bowls topped with the chopped scallions and toasted sesame seeds.
